6 potatoes
1 onion chopped
1/2 green bell pepper, chopped fine
2 teaspoons salt
4 tablespoons margarine
1/2 cup flour
3 1/2 cups milk
1 1/4 teaspoons salt
1/8 teaspoon black pepper
3 cups ham cooked and cubed
1 1/2 cups cheddar cheese, grated
Peel potatoes and cut into bite-size pieces. In saucepan, mix potatoes with onion, green pepper, and 2 teaspoons salt, and cover with water. Bring to boil. Turn off heat and let set for 5 minutes. Drain and spread potatoes in 9x13-inch baking pan. Make white sauce by melting margarine in saucepan. Stir in flour to make a paste. Add milk, 1 1/4 teaspoons salt, and pepper, and stir and cook till thickened. Mix in cubed ham and 3/4 cup grated cheese. Pour over potatoes. Top with remaining cheese. Bake at 350 degrees F. for 35 to 40 minutes.
