Place sugar, syrup, salt, and water in pan over low heat. Stir until sugar is dissolved. Cook until a small amount forms a soft ball in cold water—a candy thermometer takes the guesswork out of the job.
Beat egg whites until stiff and continue beating while pouring half the syrup in gradually. Cook remaining syrup until it forms a hard ball in cold water. Beat egg whites slowly until remaining syrup cooks. Add remaining syrup gradually. Continue beating until candy is thick enough to drop. Add vanilla, cherries, and nuts. A few drops of red vegetable coloring gives a prettier pink color. Drop on wax paper.
