Brush one side of tortillas with oil. Divide cheese, then jalapeño, tomato, and cilantro evenly over other side of 3 tortillas. Cover with remaining tortillas, oiled sides up. Cook quesadillas in heavy skillet or griddle over medium heat, one at a time, for 2–4 minutes or until cheese is melted and tortillas are lightly browned, turning once. Cut quesadillas into quarters. Serve with sour cream.
Fun Fact: To keep warm dishes warm on the serving table, fill a small cloth bag halfway with raw rice. Microwave for 2–3 minutes till hot to touch. Place on serving platter and cover with napkin. Nestle dish into warm "nest."
