Preheat oven to 400°. Spoon little mounds of cheese spaced well apart on 2 parchment-lined baking sheets; flatten with back of a spoon. Bake 5 minutes, until golden. Leave on baking sheets for a minute to firm up. Remove slowly from paper; curl crispies over a rolling pin until set. Cool on a wire rack.
