Thaw pastry sheet for 20–30 minutes. Preheat oven to 400°. Unfold pastry on lightly floured surface. Cut along fold marks into 3 strips. Cut each strip into 6 rectangles. Place 2 inches apart on baking sheet. Bake 15 minutes or until golden. Cool on wire rack.
Beat blue cheese, cream cheese, cream, and lemon juice until smooth. Split pastries into 2 layers. With 1 tablespoon cheese mixture spread each of half the pastries. Top with remaining halves and spread with remaining cheese mixture. Sprinkle with pecans and parsley. Top each pastry with 1 apple slice. Refrigerate until ready to serve.
Fun Fact: A bottle of wine and a hunk of cheese . . . what could be better? A cheese board is easy, yet elegant. It requires only unwrap- ping the cheese. Put an assortment of your favorites on a pretty platter or board along with appropriate crackers or bread. Add grapes or sliced apples or pears . . . nuts make a nice accompaniment as well. Separate cheeses so they don’t touch. Serve at room temperature. Have a knife for each cheese —wide blade for soft, sharp knife for hard.
