Hollow out Gouda with sharp knife, leaving wax coating intact to form shell. Process Gouda cheese, cream cheese, sugar, lemon juice, and curry powder in food processor until smooth. Mound cheese mixture into shell. Cover; refrigerate 3 hours or overnight.
Place cheese on serving tray 1 hour before serving; surround with fresh fruit wedges or assorted crackers.
