1 Soak the bread in the water for 10 minutes. Squeeze out the excess liquid.
2 In a large bowl, mix together all the ingredients except the oil and lemon wedges. Knead the mixture with clean hands until it is thoroughly blended.
3 Rinse your hands in cool water. Form the meat mixture into 1-inch balls.
4 Heat the oil in a large skillet. Add just enough of the meatballs as will fit comfortably without crowding. Cook, turning the balls occasionally, until browned on all sides, about 8 minutes.
5 Serve hot with lemon wedges.
