Creamy Garlic-Almond Sauce:
In frying pan, combine oil, garlic, and ginger. Sauté on low heat, uncovered, until garlic is very tender, about 5–6 minutes, stirring often. Transfer to blender, add almonds and 2 tablespoons water, and pulse to purée, adding more water, if necessary.
Chicken Bites:
Season chicken pieces with salt and pepper. Heat oil in a frying pan on medium heat; add chicken and sauté, tossing until golden, about 5 minutes. Pour in Creamy Garlic-Almond Sauce and cream; simmer, stirring occasionally, until sauce thickens, 2–3 minutes. Transfer mixture to bowl and garnish with parsley and almonds. Serve with toothpicks and plenty of napkins.
