Let the wrapped phyllo stand at room temperature. Unwrap, cover with wax paper and a damp towel to prevent drying. Place 1 sheet of phyllo at a time on the work surface and brush with melted butter. Cut the phyllo horizontally into 5 strips. Place a small spoonful of Four-Cheese Filling at the end of a strip, fold the phyllo over the filling about 1/2 inch and roll up; the finished roll should resemble a cigar. Place on a baking sheet and brush with additional melted butter. Repeat with the remaining phyllo, filling and melted butter. Bake at 375° for 20 minutes or until golden brown. Tiropetes may be frozen before baking; use wax paper between layers to prevent sticking together.
Four-Cheese Filling:
Beat the eggs in a large mixer bowl. Add the cheeses and pepper and mix well. Note that there is no salt required; the cheeses provide enough.
Fun Fact: Silicon Valley is located in the southern part of the San Francisco Bay Area in Northern California. The term, coined in 1971, originally referred to the region's large number of silicon chip innovators and manufacturers, but eventually came to refer generally to the electronics industry. Silicon chips, or integrated circuits, are used in almost all electronic equipment today and have revolutionized the world of electronics. Silicon Valley is considered to be the home to the computer revolution that has changed the lives of virtually everyone in the world.
