Tournedos are 2-inch thick slices of beef tenderloin trimmed of all fat. Sauté tournedos in 1/2 cup butter as desired—rare, medium, or well done. Add shallots and brown just a little, add brandy and flame it. Place tournedos on a platter and keep warm. To the sauce remaining in the skillet, add tarragon and 1/2 cup Madeira wine and cook until sauce is reduced to two-thirds of its original quantity. Add Madeira sauce and boil for 5 minutes. Season with salt and pepper. Remove from heat and blend in remaining 1/2 cup Madeira wine and 1/2 cup butter. Place the sliced truffles on the tournedos and pour the sauce over them.
