Roll the puff pastry 1/8-inch thick and cut into 12 pieces large enough to fit turkey fillets. Bake. Meanwhile, flatten turkey fillets with a cleaver and season them with salt. Sauté fillets in butter over very low heat for 10 minutes. Do not brown the fillets. Set 1 fillet on a piece of baked puff pastry, top each fillet with truffles and 1 slice of cheese and cover with another piece of puff pastry. Arrange on baking sheets and bake in a moderate oven (375°F) for 10 minutes.
