Combine tomatoes and onion in a large bowl. In a separate bowl, combine remaining ingredients. Pour over tomatoes and onion; toss gently. Let stand at room temperature for up to one hour before serving.
Tip: If time’s short, pick up a bag of tossed salad greens from the local grocery and toss on a variety of favorite toppings to make it special. Try crumbled blue or feta cheese, freshly chopped herbs, sweetened dried cranberries, apple or avocado slices and walnuts...yum!
