Combine pineapple with juice, sugar, eggs, water, cornstarch and vanilla in a medium bowl; mix well. Pour into a greased 9"x9" baking pan. Dot top with butter; sprinkle with cinnamon. Bake, uncovered, at 350 degrees for one hour.
Tip: Fresh berries are plentiful in the summer...use them to top cupcakes, or serve sliced over vanilla yogurt. Share a pretty pint basket with neighbors…sure to bring a smile!
