Beat egg whites in a shallow bowl until foamy. Combine bread crumbs and seasonings in a separate shallow bowl. Toss zucchini strips in egg whites, then in bread crumbs to coat. Place on a baking sheet coated with non-stick vegetable spray. Sprinkle with Parmesan cheese; spray tops lightly with non-stick spray. Bake at 450 degrees for 15 to 20 minutes, until crisp and golden.
