In a small skillet, toast sesame seeds for 2 minutes or so, just till seeds begin to turn golden brown. Put carrots into casserole dish with just enough water to cover bottom (1/3 cup or so). Sprinkle with sugar and lemon pepper, then put thin pats of butter all over. Cover and microwave on HIGH 9 minutes, stirring once or twice. Stir in sesame seeds, and cook 2 more minutes on HIGH. Let stand another 5 minutes.
Editor’s Extra: Great colorful dish! You can use no-sodium lemon pepper and unsalted butter, and/or Splenda to reduce the already small amounts of sodium and sugar in this recipe, if your diet requests. But it’s so yummy, you’ll make it all the time for everybody!
