Combine coleslaw, onion and cheese in a large salad bowl; mix well. Add salad dressing as desired; toss to coat. Add croutons and mix thoroughly. Refrigerate for 4 to 6 hours.
Tip: Lacy cheese crisps are a tasty garnish for green salads. Sprinkle freshly grated Parmesan cheese by the tablespoon, 4 inches apart, onto a baking sheet lined with parchment paper. Bake for 5 to 7 minutes at 400 degrees until melted and golden, then cool.
