Pound steak to flatten. Layer prosciutto or deli ham over steak; top with peppers, cheese, garlic and spinach. Roll up jelly-roll style, starting with long side; tie with 2 to 3 lengths of kitchen string. Brush with olive oil and sprinkle with salt and pepper; place in a greased 13"x9" baking pan. Bake, uncovered, at 350 degrees for 40 minutes. Slice at 2-inch intervals.
