Tortilla Stew

Ingredients

2 (10-ounce) cans chicken, drained
2 (15 1/2-ounce) cans hominy
2 (15 1/2-ounce) cans chili beans
2 (14 1/2-ounce) cans Mexican-style stewed tomatoes
2 (11-ounce) cans sweet corn & diced peppers
2 (10-ounce) cans tomatoes with green chiles
2 (1-ounce) packages ranch salad dressing mix
1/2 onion, chopped
salt and pepper to taste
Garnish: corn or tortilla chips, shredded cheese, sour cream, guacamole

Directions:

Stir together all ingredients except garnish in a large stockpot. Simmer over medium heat for 30 minutes. Spoon individual portions over corn or tortilla chips. Garnish as desired with shredded cheese, sour cream and guacamole.

Tip: A simmering stew or chili is so easy to prepare and always welcomed by guests. Pass a basket of warm bread or tortillas, sit back and enjoy your company!
