Place chicken breasts in a food processor and pulse a few times until chicken is in small pieces. Be careful not to process too much or you will end up with a paste.
In a small bowl, mix together ginger, scallions, garlic, soy sauce, red pepper flakes, and hoisin sauce.
Heat flat top to medium. When griddle is heated, add the vegetable oil and saute chicken until cooked through. Stir in ginger mixture and cook for 1 minute. Remove from the heat. Season with salt and pepper and serve warm wrapped in lettuce cups.
