Spread barbecue sauce on the tortillas. Layer the remaining ingredients on half of tortilla then fold tortilla in half to cover chicken and vegetables.
Oil preheated griddle then place filled tortilla on griddle and cook until slightly browned and crisp, turn and cook on other side.
Quesadillas are done when filling is hot and tortilla is crisp. Serve with additional barbecue sauce or ranch dressing.
Variation: This can be cooked on the Barbecue Box with or without using foil. To cook on Fire Pit with Grill Top wrap in heavy foil, be sure to seal all edges. Place on grill and cook 5 to 15 minutes depending on temperature of your fire. Turn occasionally. It is best to not put directly over flame.
