Mix all ingredients for the Tzatziki sauce together and refrigerate for at least 1/2 hour.
Mix meat with thyme and lemon juice and let sit for 15 to 20 minutes. Season steak with salt and pepper then brown on griddle with a small amount of cooking oil over medium heat. Place pita on top of meat and cover until heated through.
Remove pita and spread on Tzatziki sauce, fill with meat and top with tomatoes, onions, and parsley. Roll pita around filling.
