Mix oil and seasoning of your choice together in small bowl or measuring cup. Coat fish filets with flour. (For easy clean up, put flour and filets in a zip lock bag and shake.)
Heat the griddle, then pour oil and pepper mixture on griddle. Heat until oil begins to smoke slightly, then back off heat. This will blacken the seasoning. Spread the oil evenly on griddle then place filets on top of the seasoning and cook for about 3 to 5 minutes on each side.
