Preheat flat top on medium with the panini press on top.
While grill is heating, butter one side of each bread slice (or brush with olive oil). Put buttered slices together and place 2 slices cheese and desired toppings on unbuttered side.
Place bread slices and toppings together as if you are making a grilled cheese (with buttered sides on the outside). Place sandwich on griddle and top with press, pressing down slightly.
Cook 2-3 minutes until bread is golden brown and cheese is melted.
Place panini press back on grill to heat for at least 5 minutes, then make next sandwich.
