Mix mayonnaise and horseradish in a small bowl. Set aside.
Fry hamburger patties on the griddle. Spread one side of each slice of bread with mayo or butter (mayo will make bread much crispier). Place side with spread down on hot griddle.
Spread 1 Tbsp. of horseradish sauce on one piece of bread then top horseradish sauce with sauteed onions. Place cheese on the other slice of bread.
Cook until bread is golden brown and cheese is melted. Place hamburger between slices of bread and garnish as desired.
