1. Wipe chicken with a damp cloth then, with a cleaver, chop, bones and all, in 2-inch sections. Place in a heavy saucepan.
2. Boil water and pour over chicken. Bring to a boil again then simmer, covered, 30 minutes.
3. Meanwhile slice mushrooms, bamboo shoots and water chestnuts. Add to chicken, along with soy sauce, salt and pepper and simmer, covered, 30 minutes more.
