In 10-inch skillet, melt butter (or margarine) over medium heat add mushrooms, green onions, and garlic cook and stir until vegetables are tender. Blend in flour. Remove pan from heat gradually stir in chicken broth, milk, and nutmeg. Add crab (imitation crab, 1 can [7 1/2 ounces] crabmeat, or other cooked seafood of your choice may be substituted) and parsley (2 teaspoons crushed dried parsley flakes may be substituted for fresh). Reduce heat to low. Cover and heat through. Using fork, make X in top of potatoes and with thumbs and index fingers push potato to open it up. Spoon sauce over potatoes. Serve immediately. Makes 3 cups sauce.
