Clean and cut 3- to 4-inch lengths of tender celery set aside. Blend cream cheese with Roquefort cheese (blue cheese may be substituted), softening with a little milk (or cream). Use mixture to fill celery pieces. Or a filling may be made by blending finely grated cheddar, Swiss, or other cheese with a little cream or mayonnaise to soften season as desired.
Variation
Stuffed Dates: The same cheese mixtures can be used to stuff dates or prunes.
