Cook unpeeled new potatoes (or regular potatoes, quartered) in small amount of boiling salted water in covered saucepan for 20 to 30 minutes or until just tender peel. Drain and gently coat with melted butter (or margarine). Sprinkle with parsley (2 teaspoons crushed dried parsley flakes may be substituted for fresh).
Variation
New Potatoes with Sesame: Cook potatoes as above. Cook 1/3 cup sliced green onions, including green ends, in 1/4 cup butter until soft. Spoon over hot drained potatoes sprinkle with toasted sesame seeds. Serve immediately. To toast sesame seeds, spread in shallow layer in baking dish. Bake at 350 degrees F. 5 to 8 minutes or until lightly browned.
