Wash celery well, separating ribs and saving leaves for other recipes. Cut celery into 1/4-inch diagonal slices. Heat oil in wok or large skillet, add celery and stir rapidly, coating with oil. Season with salt and pepper to taste cook, tossing constantly for 2 to 3 minutes. Add water (broth may be substituted), turn heat to medium-low, cover and cook for 2 minutes longer. Remove cover, turn heat to high and reduce liquid until thickened. Add soy sauce to taste.
