Oven-Fried Potatoes

Ingredients

4 potatoes
3 tablespoons vegetable oil
1/2 teaspoon salt
1/8 teaspoon black pepper

Directions:

Preheat oven broiler to 450 degrees F. Peel and thinly slice enough potatoes to make about 3 cups. Toss oil into sliced potatoes until all slices are coated. Rub oil generously into shallow baking dish and arrange potatoes evenly over bottom of dish so that potatoes are only about 2 slices deep. Broil potatoes about 6 inches from source of heat for 5 to 7 minutes, until potatoes are golden brown. With spatula, turn potatoes over, sprinkle with salt and pepper to taste and continue to broil until potatoes are tender and golden brown.
