Preheat oven to 400°.
Unroll crescent roll dough. Separate along perforations into 8 triangles. Break ham into small pieces with a fork.
On each triangle, spread 1 teaspoon mustard. Sprinkle a heaping tablespoon of the ham and 1 tablespoon of the Monterey Jack cheese on the wide half of the triangle. Loosely roll each triangle beginning at the wide end. Place rolls, pointed-end down, about 2 inches apart on an ungreased baking sheet. Brush tops with egg and sprinkle with Parmesan cheese.
Bake 12 minutes or until golden brown. With a spatula, loosen each roll from baking sheet. Cut each in half. Serve warm.
If making ahead, cover unbaked rolls and refrigerate up to 2 hours. Bake in preheated 400° oven 12 to 14 minutes.
