Ham Con Queso

Ingredients

1 (1-pound) package pasteurized process cheese spread pasteurized process
1 (10-ounce) can tomatoes with chilies diced
1 tablespoon dried minced onion
1/2 teaspoon salt (optional)
2 cups ham cubed cooked or chicken breasts
1 tablespoon parsley chopped fresh or cilantro
Assorted chips
Sliced jalapeño peppers

Directions:

Cut cheese into cubes. Place in a 1-quart microwavable dish or measuring cup. Add tomatoes and green chilies, onion, and salt, if desired. Cover with waxed paper. Microwave at 50% power (350 watts) 5 minutes, stirring every 2 minutes, until melted and blended. Stir in ham.

Transfer to a chafing dish or small slow cooker. Garnish with parsley. Serve hot with chips and jalapeños.


To prepare on stovetop, place cheese, tomatoes and green chilies, onion, and salt in a medium saucepan. Over medium-low heat, cook until cheese is melted, stirring constantly. Stir in ham and heat through. Garnish and serve as above.
