In a medium bowl, stir cream cheese, butter, mayonnaise, and dry mustard until smooth. Stir in sour cream until blended. Stir in Roquefort cheese, 3 tablespoons Parmesan cheese, minced green onions, and 2 tablespoons of the milk until blended. (Mixture will be chunky.) Let stand 30 minutes to develop flavor.
Just before serving, thin with additional milk to desired consistency. Garnish with Parmesan cheese and sliced green onions. Serve with crackers, chips, vegetables, or fruit.
*Dip fruit in lemon juice to keep from turning brown.
