1. Combine gelatin and ¼ cup water, stirring well. Set aside.
2. Combine blueberries, ½ cup water, and lemon juice in a medium saucepan. Bring to a boil, reduce heat, and simmer, uncovered, 8 minutes, stirring frequently.
3. Remove saucepan from heat and add gelatin, stirring well until gelatin is dissolved. Let cool for 10 minutes and stir in sweetener.
4. Cool to room temperature. Pour into glass jars and cover tightly. Chill 4-6 hours or until mixture is thoroughly chilled. Store in refrigerator for up to 1 month.
