1. Preheat oven to 400ºF.
2. In a large bowl, combine the flours, cornmeal, baking powder, salt, and sweetener mix well.
3. In a small bowl, beat eggs lightly mix in the cottage cheese, buttermilk, orange juice, zest, oil, and raisins.
4. Make a well in the center of the flour mixture and add liquid ingredients all at once. Stir with a fork just enough to blend ingredients.
5. Fill muffins cups 2/3 full. Bake in a 400ºF oven until golden brown, about 20 minutes.
6. Turn out of cups and serve hot or cool, or wrap airtight and refrigerate or freeze. To reheat muffins, wrap in foil and place in a 350ºF oven for 15 minutes if chilled, 25 minutes if frozen.
