1. Preheat oven to 375°F.
2. Core apples to within ½ inch of bottom, leaving an inch-wide cavity. Peel about a 1-inch strip of skin from stem end of each apple
3. Arrange apples in an 8-inch square or 9-inch round baking pan. Combine water and lemon juice pour over apples. Sprinkle a pinch of cinnamon, mace, and nutmeg on each apple.
4. Cover and bake for 50-60 minutes, until apples are tender. Or put in microwave on HIGH for about 4-6 minutes, until apples are tender, turning dish about halfway through the cooking time.
