Brennan loves these blueberry muffins.
1. Preheat oven to 400ºF.
2. Combine the first 5 ingredients in a large bowl. Fold in blueberries. Make a well in the center of the mixture.
3. Combine orange juice, margarine, egg, egg white, and orange zest. Add to the dry ingredients. Stir just until moistened.
4. Fill muffin cups 2/3 full. Bake for 20-25 minutes, until golden.
