Slice tomatoes in half set aside. Heat one tablespoon reserved liquid in a 12" non-stick skillet over medium heat sauté pepper for about 5 minutes. Add sausage sauté for 5 minutes. Stir in water, stewed tomatoes and rice bring to a boil. Reduce heat simmer for 5 minutes. Mix in sun-dried tomatoes simmer, covered, until most of the liquid is absorbed, about 5 minutes. Season with hot pepper sauce before serving.
