Prepare Lime-Yogurt Dressing in large glass or plastic bowl. Add remaining ingredients except lettuce toss. Cover and refrigerate about 2 hours or until chilled. Serve on lettuce.
Lime-Yogurt Dressing
3/4 cup plain nonfat yogurt
3 tablespoons chopped fresh parsley
2 tablespoons lime juice
2 tablespoons red wine vinegar
1/2 teaspoon grated lime peel
1/2 teaspoon salt
1/4 teaspoon pepper
Mix all ingredients with fork or wire whisk.
