Cream shortening, sugar, and egg. Sift dry ingredients together and add to shortening mixture, alternating with milk. Add flavoring. Fold in cherries and nuts. Bake in greased 9-inch baking dish for 30-35 minutes at 375°.
Sauce:
Mix juice mixture with sugar and cornstarch. Cook slowly, stirring while cooking, until thickened and clear. Serve sauce over individual pieces of warm cake. Garnish with whipped cream, if desired.
