Line a 10x15-inch jellyroll pan with foil and spray with cooking spray. Beat eggs for 5 minutes and add rest of ingredients. Pour mixture in foil-lined pan and bake at 375° for 15 minutes. Turn onto a kitchen towel that has been sprinkled with powdered sugar. Pull foil off and roll in towel to cool, starting at narrow end. When cool, unroll, spread with filling mixture and roll up jellyroll again.
