Beat oil, sugar, eggs, vanilla, and carrots in mixer. Add dry ingredients that have been sifted together 2 times. Add pineapple, coconut, and nuts. Bake in greased Bundt pan 350° for 50-55 minutes. Frost with Cream Cheese Frosting.
Cream Cheese Frosting:
Combine; thin with a little cream to make it spread nicely.
Note:
Can use 1 cup cooked mashed carrots or grated carrots.
