Heat vegetable oil in skillet and sauté garlic and onion until tender. Add pork and soy sauce and sauté until browned. Remove and drain in strainer. Stir in cole slaw mix and salt and pepper; let cool 10–15 minutes.
Carefully separate eggroll wrappers. Lay one wrapper on clean surface with corner of roll pointing toward you. Place about 2 tablespoons of filling near corner facing you, and roll edge toward middle. Fold in both sides and continue rolling. Moisten opposite edge with water to seal. Repeat with other wrappers.
Fill basket of small fryer with 3–4 rolls at a time; fry in 375° oil until golden brown, about 3 minutes on each side. Drain on paper towels.
Note: May use ground turkey, chicken, or shrimp for the pork. Easy to freeze for future use.

He was also the oldest living person to have flown in space when, at the age of 77 in 1998, he flew aboard the Space Shuttle Discovery mission STS-95. Glenn served as a United States Senator (D-Ohio, 1974–1999), and received the Congressional Space Medal of Honor.
