Spray muffin tins with nonstick cooking spray. Place 2 won ton wrappers over each muffin tin at opposing angles. Push down into tin to form crust for quiche.
Whisk together eggs, heavy cream, milk, salt, and pepper. Pour mixture into each crust until they are about 3/4 full. Add ham and cheese to taste. Bake at 350° for 20 minutes, or until crusts are browned and center is set.
