Blue Cheese Dressing:
Combine all ingredients in bowl; cover and chill.
Chicken Wings:
Disjoint wings at elbow and discard tips. Heat oil in deep-fryer to 375°. Fry wings until crisp and golden, about 8–10 minutes. Drain on paper towels. Melt butter in a saucepan and blend in the bottle of hot sauce. Place chicken wings in large bowl and pour hot butter sauce over wings. Toss well to coat. Arrange wings on platter and serve with celery sticks and the bowl of Blue Cheese Dressing for dipping.
