Colorlessly fry celery and onions in butter over low heat until they turn clear. Place fish and potatoes in a bowl and mash them. Add celery, onion, salt, pepper, Worcestershire, and egg. Mix thoroughly. Roll the mixture into balls the size of walnuts. Cut cheese into 1/4-inch cubes. Roll these in palms of hands until round. Push 1 piece of cheese into the center of each fish ball and reshape by rolling in hands again. Roll in sifted bread crumbs. Fry in deep fat, 375°, until golden brown.
