The ingredients aren’t given in specific quantities because you adjust to the amount of shark steak you have. Marinate shark steaks in orange juice concentrate overnight in refrigerator, adding tequila (to taste) if desired. A jigger or 2 is plenty. Place marinated shark in baking dish and decorate with rings of onion and bell pepper. Sprinkle with almonds. Broil about 7–9 minutes in preheated oven until meat flakes easily. Watch carefully to avoid burning. Turn and broil about 3 minutes on other side. Serve immediately on bed of rice.
Variation: As an alternate recipe, use a can of frozen piña colada drink concentrate and garnish with toasted coconut.
Fun Fact: Haystack Rock at Cannon Beach, Oregon, is 235 feet high. Climbing “The Rock” is prohibited because it is a sanctuary harboring four types of birds. The surrounding tide pools and marine life are also protected. Three smaller, adjacent rock formations to the south of Haystack Rock are collectively called "The Needles."
