Mango Salsa:
Combine lime juice, fish sauce, and sugar in a large bowl. Stir until sugar dissolves. Add remaining salsa ingredients, mix, cover and refrigerate for 30 minutes. Stir well before serving.
Fish:
Grill Mahi Mahi over medium-hot coals until fish flakes easily, about 15 minutes. Serve Mango Salsa over fish.
Note: Fish sauce can be found in the International section of many supermarkets. Try this recipe with any firm white fish such as halibut, cod, or red snapper.
