Cook onion in butter until tender. Combine all ingredients, except crumbs and parsley. Shape into 6 cakes and roll in crumbs; place cakes in a heavy frying pan with 1/8 inch of oil, hot but not smoking. Fry at moderate heat. Brown on one side, then turn carefully to brown other side, approximately 6 minutes. Drain. Garnish with lemon wedges.
