Preheat oven to 425°. Place snapper fillets in a shallow pan and cover with wine and remaining one tablespoon lime juice. Cover pan with aluminum foil and bake for 25 minutes or until fish flakes easily with a fork. Arrange fish on serving plate and spoon Ginger Salsa on top.
Ginger Salsa:
Combine tomatoes, scallions, cilantro, jicama, 2 tablespoons lime juice, chili pepper, and ginger in bowl. Cover and let sit for at least one hour.
